What's Next - I'm Gonna Tell You


Theme restaurants are popping up all over the place, The Melting Pot has taken its place as a " Fondue Spot". I have a friend that is opening a Panini only restaurant, it's a great idea, and I believe he will make a million dollars. If he is smart he will sign me on for consultation with options for a few grand a year to start. Chop Houses which were the norm many years ago are coming back as a clubby dark paneled place where you can get big portions of grilled meat and hearty side dishes. I spent almost 7 years at the Old Homestead ( the oldest steak house in NYC) which was a " tourist trap " but still attracted the business and convention trade with huge steaks and oversized lobsters at foolish prices.


In 1998 I traveled to Brazil where I was introduced to the " Churrascaria " or Brazilian BBQ Steakhouse. If I had fifty grand when I returned back to the states I would have been a Gaucho King right now. Twelve years Texas de Brazil and Fogo de Chao have paved the way for major city chains who specialize in a destination steak house styled after the Churrascaria. Huge coin is spent at these venues daily. The salad bar highlights the center of the establishment while Gaucho wait staff patrol the dining room with skewers of highly seasoned grilled meats ready for table side delivery. Poorboy Dave missed the boat on that one. Chop't has got it all going on. The two Chop't locations in downtown DC have lines outside the door at 1130 and running until after 1:00 PM. Chicken, steak, and grilled shrimp optional. Moe's and Chipotle have the Burrito Trade covered. What is left? You may ask. I am about to tell you >>>>>> Just not today

  2. Hey food nomad, how about taking the grilled cheese idea a step further ala NYC. You may have seen the short news piece (on the NBC national broadcast maybe)a few months ago about a guy who delivers grilled cheese sandwiches to your door in 5 minutes or less. He works from a central location and actually delivers his goods on his bike. He delivers all afternoon and late night, perfect for young folks returning from the pub and looking for a late night snack before bed. The grilled cheese is top shelf-- he used cheddar and green apple slices on good bread-- and I believe that he charged $5 per sandwich delivered hot. People Tweet him their orders and he delivers. Business is booming and what a simple business model. Those of us living in the Washington DC metro area are enslaven by it's outdated and traffic choked work network which often results in constricting our evening activities particularly when we consider dinner options for the family. Why not try a comfort food quick delivery that service that is powered by internet or Tweet ordering and can deliver within 30 minutes? Having a top shelf grilled cheese as one of your standards and a good tomato soup and fresh salad option. The key would be to keep the menu fairly simple, fresh, and healthy, hot and quick to the doorstep AND resonably priced. The business success with come with volume! The commuting situation will only grow worse in our metro area and the need for a heathy dinner delivered option will grow. You can even offer the dinner in a box so that it can travel to the pool, soccer field, baseball diamond, or outdoor concert. This is an idea that may not work every where, but should have a chance in our area. It should require minimal overhead but pelnty of energy. Cheers! - Mikey the K.

  3. Oh, and one more thing and regarding the comfort food delivery service...obviously the bike delivery model works well in NYC, but around here a Cooper Mini would work better. Start with one Mini and acquire a small fleet as the business grows! Seed money....hummm, I may have an option ;-0. Mikey the K.
